We collect the olives at an early stage, achieving more intense aromas and flavors. During the pressing process the temperature does not exceed 27 ° C and thus the olive oil retains all its organoleptic and nutrients.
We store the olive oil in stainless steel tanks with inert gas, where it will undergo natural precipitation. We thus ensure the quality, the aromatic palette and the therapeutic polyphenols unchanged.
